About the Role
The Pastry Chef Assistant will take direction to apply innovative techniques in pastry, bakery, and dessert presentation, supporting both casual and fine dining experiences within the club. This position is responsible for maintaining the club’s pastry standards and contributing to the overall Discovery Land Company experience for members and employees. • Work with all culinary and F&B leaders to create exemplary culinary standards and an environment of continual improvement. • Ensure continual product quality control and procedures are maintained daily. • Minimize spoilage, waste, and over‑production with consistent procedures. • Complete and record all cleaning schedules, temperature records, and opening/closing checklists each day. • Create and implement new menu ideas together with the Pastry Chef. • Organize kitchen and preparations efficiently to handle daily restaurant covers. • Monitor inventory levels through regular inventory checks. • Maintain all equipment and ensure proper handling by culinary staff. • Uphold quality of all pastry items and follow standard recipes consistently. • Check food for taste, temperature, and visual appeal. • Ensure uniform dishes and adhere to established portion sizes per Pastry Chef specifications. • Prevent use of contaminated products at any phase of food preparation. • Comply with all government, safety, health, and security standards at all times.

What You Bring
• At least one year of line cook or prep cook experience in large world‑class resort, hotel, or club environments. • Culinary degree and pedigree preferred. • Experience in pastry and desserts preferred. • At least one year of pastry cook experience in large world‑class resort, hotel, or club environments. • Knowledge of culinary and baking techniques. • Positive attitude, professional demeanor, and strong communication and interpersonal skills for serving members, guests, and team members. • Ability to work effectively in a team environment. • Ability to stay calm and focused during the busiest periods. • Proficiency in reading, writing, speaking, and understanding English; additional languages preferred. • Capability to meet physical demands, including standing, walking, and lifting items up to fifty pounds for extended periods.
