About the Role

In this position you will help set culinary standards, hire and train kitchen staff, manage labor and food costs, and develop standardized recipes and signature items. You will also plan menus, coordinate special events and catering, monitor food‑tracking systems, and ensure all safety, health, and sanitation policies are followed while maintaining a clean, cross‑trained team. • Collaborate with culinary and F&B leaders to uphold high culinary standards and drive continuous improvement. • Hire, train, and schedule kitchen staff to meet business volume while controlling labor costs. • Develop standardized recipes, signature dishes, and portion controls; monitor food costing and tracking systems. • Plan menus and special event catering in partnership with the Executive Chef. • Evaluate staff performance, provide feedback, and enforce fair disciplinary actions. • Ensure compliance with HACCP, local food safety regulations, and all safety, health, and security policies. • Maintain kitchen equipment cleanliness and cross‑train team for full utilization.

What You Bring

The Club is seeking a Seasonal Chef de Cuisine for the April‑October 2026 season. The Chef de Cuisine will work closely with the Executive Chef, Culinary Director, and Food & Beverage leaders to oversee daily kitchen operations and help craft the Discovery Land experience for members and staff. A culinary degree or equivalent pedigree is required, along with at least seven years of progressive experience in high‑end resorts, hotels or private clubs. Candidates should possess deep knowledge of cookery techniques, food products, seasonal sourcing, and F&B operational requirements. The role demands flexible scheduling, including evenings, weekends, holidays, and shifts longer than eight hours. Applicants must demonstrate strong communication, teamwork, and composure under pressure, as well as the physical ability to stand, walk, lift up to 50 lb, and work in varied indoor and outdoor conditions. • Possess a culinary degree and at least 7 years of progressive experience in high‑end resorts, hotels or clubs. • Demonstrated knowledge of cookery techniques, food products, sourcing seasonal ingredients, and F&B operations. • Ability to work flexible hours, including evenings, weekends, holidays, and shifts over 8 hours. • Strong communication, teamwork, and ability to stay calm under pressure. • Physical ability to stand, walk, lift up to 50 lb, and work in varied indoor/outdoor conditions.
