About the Role

• Oversee day‑to‑day restaurant operations, including opening and closing procedures. • Analyze menus, pricing, and product offerings with Culinary and F&B leadership to maximize profitability. • Organize restaurant setup efficiently to handle daily covers and special events. • Monitor reservation status and allocate tables to optimize seating capacity. • Implement strategies to enhance the dining experience and customer satisfaction. • Manage inventory, order supplies, and control food and beverage costs. • Maintain and update guest profiles on a daily basis. • Maintain floor presence, communicate with colleagues, and manage the restaurant through observation and teamwork. • Address member or guest issues promptly and courteously. • Monitor guest feedback and adjust service quality as needed. • Establish procedures and training to ensure fast, courteous, efficient service and compliance with safety guidelines. • Ensure completion of cleaning schedules, temperature records, and opening/closing checklists. • Maintain equipment and ensure proper handling by F&B staff. • Comply with all government, safety, health, and security standards. • Maintain high standards of food quality, presentation, and consistency. • Conduct regular inspections to ensure food safety and sanitation compliance. • Promptly address issues related to food quality, service, or cleanliness. • Recruit, train, and supervise restaurant staff including servers and cooks. • Develop and implement training, development ideas, department objectives, and goals. • Schedule staff to ensure adequate coverage, monitor punctuality, and manage labor budget. • Lead daily briefings to communicate information and provide constructive feedback. • Listen to employee concerns and resolve challenges promptly. • Ensure attendance at training programs and conduct key training sessions. • Recommend promotions and disciplinary actions for subordinates. • Ensure cost effectiveness of resources to achieve optimum profitability. • Prepare annual capital and operational budget for the restaurant. • Monitor inventory levels and compare with budget allocations. • Control pilferage and breakage to reduce operational costs. • Enforce Discovery Land’s rules and policies regarding resource management. • Maintain a vision for quality and excellence in restaurant operations. • Meet physical demands such as standing, walking, and lifting items up to 50 lb in various weather conditions.

What You Bring

• Hold a degree in Hospitality Management or Culinary field. • Have at least five years’ experience in a luxury full‑service environment. • Possess experience in Food & Beverage Management with international exposure. • Sommelier certification from an internationally recognized institution (preferred). • Experience handling private dining events. • Demonstrate proven leadership ability to train staff and maintain accountability. • Know HACCP and local food safety standards. • Exhibit strong communication, organization, and leadership skills. • Show exceptional time management and ability to serve demanding international clientele. • Proficient with operations and POS software (e.g., JONAS, TEI). • Display a positive attitude, professional demeanor, and excellent interpersonal communication. • Be flexible to work evenings, weekends, holidays, and long hours as needed. • Work effectively in a team and stay calm during busy periods. • Speak fluent English; additional languages are preferred.
