About the Role
The Culinary Extern will develop a thorough understanding of all menu items and daily specials, prevent the use of spoiled or damaged utensils and contaminated products, and ensure compliance with all government, safety, health, and security standards. In this role you will help create the Discovery Land Company experience for members and fellow employees. Maintaining the highest standards of food safety and quality is essential throughout every phase of preparation. Externs will ensure all dishes are prepared to the specifications set by the Culinary Director or Executive Chef and work rotating shifts across all outlets and stations in the kitchen. They are responsible for consistent food quality, assisting with prep tasks such as chopping vegetables, butchering meat, and preparing sauces, as well as maintaining kitchen cleanliness through light housekeeping. Daily duties include stocking and restocking ingredients, monitoring expiration dates, responding promptly to guest needs, and maintaining equipment while reporting any safety concerns. Attendance at department meetings and trainings is also required. • Ensure all dishes are prepared to specifications set by the Culinary Director or Executive Chef. • Work rotating shifts across all kitchen stations and club outlets. • Maintain consistent food quality by following standard recipes. • Assist with food prep tasks such as chopping vegetables, butchering meat, and making sauces. • Perform kitchen housekeeping, including sweeping, cleaning counters, and disposing of garbage. • Respond promptly to guest needs with a sense of urgency. • Stock and restock kitchen items and raw ingredients throughout the day. • Monitor expiration dates and inspect ingredients before use. • Maintain and report on equipment condition and safety concerns. • Attend departmental meetings and training sessions as required. • Work flexible schedule, including evenings, weekends, holidays, and shifts over eight hours. • Meet physical demands such as standing, walking, and lifting up to 50 lb for extended periods.

What You Bring
Candidates must be enrolled in an accredited Culinary or Hospitality program affiliated with Discovery Land Co. and have at least six months of back‑of‑house foodservice experience. A ServSafe certification, knowledge of health and safety regulations, and a safety‑conscious mindset are required. Applicants should demonstrate attention to detail, a positive attitude, strong communication and interpersonal skills, and the ability to work flexible schedules, including evenings, weekends, holidays, and shifts longer than eight hours. Physical stamina to stand, walk, and lift items up to 50 lb for extended periods is also essential. • Enroll in an accredited Culinary or Hospitality program affiliated with Discovery Land Co. • Possess at least six months of back‑of‑house foodservice experience. • Hold a ServSafe certification and knowledge of health and safety regulations. • Demonstrate safety consciousness, attention to detail, and strong communication skills.
