Reporting to the Hotel Manager, you will lead the full Food & Beverage operation including Restaurant, Bar, Room Service, and associated teams. The role’s primary objective is to maximise guest satisfaction and F&B profitability through effective people management, operational excellence, and strong commercial focus.
- Maintain working areas, equipment and materials in excellent condition.
- Manage daily F&B operations, ensuring smooth service and a strong guest focus.
- Provide accurate forecasts to the Head Chef and Hotel Manager.
- Deliver on budget, forecast, GOP and revenue targets across Restaurant, Bar and Room Service.
- Enforce emergency, fire and security procedures.
- Train, coach and develop staff to deliver “Yes I Can!” service.
- Oversee efficient, courteous, high-quality service across the Restaurant, Bar and Lounge.
- Maintain the highest standards of hygiene, presentation and conduct.
- Undertake Manager on Duty shifts as required.
- Ensure compliance with all food safety, sanitation and alcohol regulations.
- Ensure full menu knowledge across the team, including recipes, allergens, and pricing.
- Support stock control, stocktakes, and investigate variances.
- Attend all operational meetings as required.
- Prepare business plans and budgets with the Operations Manager.
- Support Room Service beverage orders and ensure prompt, accurate billing.
- Keep SOPs updated and ensure team training is in place.
- Ensure cash and stock security at all times.
- Motivate and challenge employees, encouraging teamwork and effective communication.
- Recruit, screen, interview and select F&B team members.
- Maintain impeccable standards of cleanliness, presentation and equipment maintenance.
- Execute F&B marketing and sales strategies to achieve revenue goals.
- Assist with menu development, promotions and in-house selling strategies.
- Reduce guest complaints through proactive service delivery.
- Manage payroll budgets, cost control and minimise wastage.
- Work with HR and Operations Managers on performance appraisals, employee relations, coaching, discipline and grievance processes.
- Monitor guest feedback weekly and implement improvements.
- Monitor market trends to keep the restaurant competitive.
- Lead upselling initiatives, product knowledge training, and guest engagement activities.
- Identify training needs and ensure consistency in service standards.
